Summer Cottage Book Review & Lightened Up Onion Dip

When I was reading Summer Cottage by Susan Kietzman I started thinking about my own family and the time we spend at our family beach house. When we were growing up we spent several weeks to all summer at my Grandparent’s place at Rehoboth Beach. I remember sun & lots of togetherness & on weekends having ‘cocktail hour’, basically the whole family gathered before dinner for snacks  – usually cheese and crackers or if we were lucky onion dip and potato chips- & the adults had ‘adult beverages’. The onion dip was made from a pack of Lipton’s Onion Soup mix and our chips of choice were ruffled. These days, much like the family in the book, we are grown with families of our own and it is unusual for all of us to be at the beach at the same time but when we do we have ‘cocktail hour’ and of course onion dip. In the book they even have a similar evening and serve onion dip!!

Peanut Butter Chocolate Chip Donuts

Donut Day!!!!!  I was not going to make donuts, I was tired of donuts (well not really but they were making my pants too tight so I was telling myself I was tired of donuts) and we were NOT going to eat sweets for breakfast.  We were going to eat cereal and toast and other things.  But then My youngest started begging for donuts, and so did her boyfriend, and another friend, and then she (my youngest) PROMISED donuts to the guidance office SOOOOOOOOOO I had to make donuts 🙂  Thank goodness because I was REALLLLLLLLLLYYYYYYY tired of cereal.

These are my favorite- peanut butter donuts with chocolate chips and a chocolate frosting.  They are so moist and peanut buttery and chocolatey!!!!!  A perfect donut for a sweet morning!!

Baked Peanut Butter Chocolate Chip Donuts
inspired by Wilton

Printer Friendly Recipe

2 cups flour
1 tsp salt
2 tsp baking powder
½ cup granulated sugar
¼ cup brown sugar
¾ cup mini chocolate chips
2 tbsp butter, melted
1 eggs
¾ cup low fat plain yogurt (I used Stoneyfield Farm Organic)
⅓ cup peanut butter
1 tsp vanilla extract
¼ cup milk
Chocolate glaze frosting

Preheat oven to 375.
Spray a doughnut pan with cooking spray.

Mix together all dry ingredients: flour, salt, baking powder, granulated sugar, brown sugar., and mini chocolate chips.
Combine wet ingredients: melted butter, eggs, yogurt, peanut butter, vanilla, and milk..
Add wet ingredients to dry ingredients, mix.

Spoon or pipe batter into pan.
Bake for 12-15 minutes.

Remove from pan and let cool a few minutes on wire rack.
Top with chocolate glaze frosting.

Makes 12 doughnuts

Chocolate Glaze Frosting

¾ cup chocolate chips
1 Tbsp butter
2 Tbsp water
¼ cup confectioner sugar

Melt chocolate chips and butter in microwave for about 1 minute.
Stir until smooth adding a small amount of water.
Add confectioner sugar and water until it is desired consistency.

Snickerdoodle Donuts

Donut Day!!!!  I know yesterday was all about being ‘healthier’ but today is donut day.  I enlisted more testers and really these were made for my husband who always complains he doesn’t get any donuts he likes (he’s not the biggest fan of chocolate, which works out because that means more chocolate for me).  They are cinnamon and there is no chocolate in sight so I only tasted them and didn’t inhale them. 

The donuts are really cinnamonny with cinnamon in the donuts and cinnamon in the glaze.  Reminiscent of my husband’s favorite Snickerdoodle cookies these donuts have been added to the favorite list in the family.  May they help start your sweet mornings!

Baked Snickerdoodle Donuts

2 cups flour
½ tsp salt
2 tsp baking powder
2 tsp cinnamon
¾ cup granulated sugar
2 tbsp butter, melted
1 egg
¾ cup low fat plain yogurt (I used Stoneyfield Farm Organic)
1 tsp vanilla extract
¼ cup milk
Cinnamon Glaze

Preheat oven to 375.
Spray a doughnut pan with cooking spray.

Cinnamon Glaze
Combine ½ cup confectioners sugar with 2 Tbsp of water and 1 tsp cinnamon.
Top donuts with glaze.

Makes 12 doughnuts

Salsa Tunafish Sandwich

I apologize for the lack of posts in the last week.  I am in the midst of a crisis and trying to figure it out.  I LOVE writing this blog and finding/adapting/creating/making new recipes but I have discovered something.  Writing a food blog leads to this equation:

Making recipes+ tasting + tweaking recipes + tasting + tasting = putting on 10 pounds in 3 months

So I have been struggling with how to make this work (plus zipping my jeans) and am going to try this equation:

Make new recipe + small taste + enlisting other tasters + walking + bike riding + ‘healthy’ meals

Hopefully the result will be my pants zipping :))

Whenever I feel like eating ‘healthy’ for some reason I crave this recipe for lunch (my husband and daughters think I’m nuts and make faces but I enjoy this).  It makes me feel like I am making a small step and leads to me eating healthier all day.

 

Salsa Tunafish Sandwich
1 can of  Chunk Light Tuna in Water, drained
1 Tbsp Nonfat Plain Yogurt
2 or more Tbsp of salsa
2 Slices of cheese
4 slices of bread of choice, toasted (I like wheat bread)
Mix together tuna, yogurt, and salsa (add as much salsa as you like to increase heat).
Divide the tuna to make 2 sandwiches.

Baked Chocolate Chocolate Chip Donuts

Donuts.  Chocolate donuts.  With mini chocolate chips melting and oozing more chocolate inside.  Need I say more?

It is donut day and today’s donut is a basic chocolate donut with some mini chocolate chips added in just to take it up a chocolate notch.  Sweet enough to satisfy your afternoon chocolate craving these donuts don’t need anything more than a cup of coffee, tea, or milk.  Enjoy and may your mornings be sweet.

Baked Lemon Donuts

 Lemon donuts!!!!!!  Light, refreshing, just the right amount of lemon-not too much so as to give you a permanent pucker but enough to let you taste the lemon, moist and oh so yummy!!!!!!! 

 This week we left the chocolate behind, not really sure what was up with that decision since I am usually all about chocolate but sometimes change is good.  

Maybe it was the warm weather and sunshine that made me crave something light and sunny but whatever it was I decided that this was the week to say yes to a little lemon in a baked good.  Tossed with a little powdered sugar these are an excellent start to a sweet morning 

The powdered sugar absorbs quickly into the moist donuts so if you make them ahead of time (I like them best cold) you might have to toss them in the powdered sugar again.

Baked Lemon Donuts


Printer Friendly Recipe

2 cups flour
1 tsp salt
2 tsp baking powder
¾ cup granulated sugar
2 tbsp butter, melted
2 eggs
¾ cup low fat plain yogurt (I used Stoneyfield Farm Organic)
6Tbsp lemon juice (juice of a 2 medium lemons)
1 tsp vanilla extract
¼- ½ cup confectioner sugar

Preheat oven to 375.
Spray a doughnut pan with cooking spray.

Mix together all dry ingredients: flour, salt, baking powder, sugar.
Combine wet ingredients: melted butter, eggs, yogurt, lemon juice, and vanilla extract.
Add wet ingredients to dry ingredients, mix.

Spoon (I find it easier to spoon the dough) or pipe batter into pan.
Bake for 12-15 minutes.

Remove from pan and let cool a few minutes on wire rack.

Place confectioner sugar in a brown lunch bag. Add donuts 1 at a time and toss to coat with sugar.

Makes 12 doughnuts

Chocolate Mini Muffins

 

I love muffins.  They are the perfect combination of breakfast and dessert and who doesn’t need an excuse to eat dessert for breakfast.  So I make muffins a lot and mini muffins are my favorite because you can eat more than 1 and go back for more.  I am on the search for the perfect chocolate muffin, one that is that perfect amount of chocolate but not too much because it is morning.  This recipe is pretty close; they are pleasingly chocolatey without being too much. 
In fact they remind me of the chocolate birthday cake my Gram always made.  These muffins are healthy-ish too (at least that’s what I tell myself) because I used yogurt and part of the flour is wheat flour.  I enjoyed them hot out of the oven but am enjoying them even more the next day.  Oh and I used my Valentine’s Day muffin pan just because it’s 2 weeks until Valentine’s Day J Hope you have a sweet morning!!

 

Chocolate Mini Muffins

⅔ cup granulated sugar
1 cup flour
1 cup whole wheat flour
2 tsp baking powder
¼ tsp baking soda
¼ cup cocoa
¾ cup chocolate chips
6 Tbsp butter
1 tsp vanilla extract
2 eggs
¾ cup lowfat vanilla yogurt

Preheat oven to 400. Line mini muffin tins or spray with cooking spray.

Mix dry ingredients: sugar, flour, whole wheat flour, baking powder, baking soda, and cocoa

In a microwave safe bowl combine butter and chocolate chips. Microwave 1-2 minutes, until chocolate chips are melted (be careful not to over microwave, it took me about 1 ½ minutes). Stir until smooth. Add wet ingredients: vanilla, eggs, and yogurt. Stir well.

Add the wet ingredients to the dry ingredients and mix until the dry ingredients are just incorporated.

Use a tablespoon to scoop batter into the mini muffin tins.

Bake 10-12 minutes.

Cool on a wire rack.

Makes 36 mini muffins

Yogurt Cake with Chocolate Chips

 

I was feeling something different.  I was tired of cookies and muffins so I needed something else to snack on.  I wanted something not real sweet and it had to be easy to make, no rolling or frosting.  I flipped through a bunch of cookbooks and was intrigued by the French Yogurt Cake in Dorie Greenspan’s Baking From My Home to Yours.  It sounded light but it had a marmalade frosting that just wasn’t what I wanted and I didn’t have any lemons for the lemon zest or almonds and there was no chocolate in the recipe but the basic idea of the cake was good. 
So I adapted the cake to suit my tastes, no lemon or almonds, increased the vanilla extract and added chocolate chips.  Oh and left off the glaze.  The result was just what I was hoping for, light, easy to make, and just the right amount of chocolate chips.  A yummy dessert 🙂

 

Yogurt Cake with Chocolate Chips
adapted from Baking From My Home to Yours by Dorie Greenspan

1 ½ cups flour
2 tsp baking powder
1 cup sugar
1 cup chocolate chips
½ cup plain yogurt
3 eggs
1 tsp vanilla extract
½ cup canola oil

Preheat oven to 350.
Grease a loaf pan.

Mix together flour, baking powder, sugar, and chocolate chips.
Mix yogurt, eggs, vanilla extract, and canola oil.
Add the dry ingredients to the wet ingredients. Mix until combined.
Pour into loaf pan.

Bake for 50-55 minutes.
Cool for 10 minutes in pan on a wire rack.
Remove cake from pan and allow to cool completely on wire rack.

Baked Chocolate Coconut Donuts

 

Its donut day!!!!!  My daughter is as obsessed with the baked donuts as I am and is helping decide what flavors to make next.  So at her request I made Chocolate Coconut donuts.

 

 

With both cocoa and baking chocolate the donuts are delectably chocolate.  The coconut adds both texture and flavor to the donuts.  Icing seemed unnecessary so the donuts are quickly ready to eat.  The batter is really thick and is easier to spoon than pipe into the pans. 
Baked Chocolate Coconut Donuts

2 cups flour

2 tsp baking powder
¾ cup granulated sugar
¼ cup cocoa
1 cup shredded coconut
2 tbsp butter, melted
2 eggs
¾ cup low fat vanilla yogurt (I used Stoneyfield Farm Organic)
3 oz unsweetened baking chocolate, melted
1 tsp vanilla extract
¼ cup milk

Preheat oven to 375.
Spray a doughnut pan with cooking spray.

Mix together all dry ingredients: flour, salt, baking powder, granulated sugar, cocoa, and shredded coconut.
Combine wet ingredients: melted butter, eggs, yogurt, melted chocolate, vanilla, and milk.
Add wet ingredients to dry ingredients, mix.

Spoon or pipe batter into pan.
Bake for 12-15 minutes.

Remove from pan and let cool a few minutes on wire rack.

Makes 12 doughnuts
