It’s Thursday so I am going to Throw it Way back to a post from 2011. When I first posted these Chocolate Chip Shortbread cookies were my go to cookie but shortly after I originally posted I stopped making them. Not really sure why but I honestly don’t remember the last time I made these cookies, I’m guessing last Christmas. With the Holidays fast approaching I want to start making cookies so I’m prepared and these seemed like the perfect ones to start with, not holiday specific and they freeze and thaw well (do you freeze your cookies? It’s a great way to control your cookie intake, when you are making lunch or dinner take out a cookie or 2 for a sweet treat after you eat, they will defrost while you are eating. Its November … Days are getting shorter & it’s getting dark much too early and even though it’s still warm in Tennessee my thoughts are going to nights by the fire and cookies! I LOVE cookies but I’ve been trying to be good and not make them very often (self protection so I don’t eat the whole batch taste testing them) but it’s November and that means thanksgiving and family and Christmas so of course you have to have cookies! So with my mind heading in that direction I got weak… I mean what could I do, I dreamt about the flavors in these cookies so I HAD to make them!
Cookie tray is starting to look better.
½ cup sugar
1 tsp vanilla extract
2 cups flour
1 cup chocolate chips
Preheat oven to 350.
Grease a 13×9 pan
Beat butter and sugar until fluffy.
Add vanilla extract.
Mix in flour.
Add chocolate chips.
Spread in prepared pan.
Bake 18-20 minutes
Makes 24 bars
