I know, I haven’t posted in forever… It’s not that I haven’t been making yummy recipes that I want to share, its just that I always forget to take pictures of the yummy food.  Really and truly when I make something we are usually so anxious to eat that by the time I remember that I want to take a picture all the yumminess has been consumed and all that’s left is dirty dishes! But I’ve put my family on notice and we are going to remember to take a picture or 2 before we dig in…at least usually.

So now that that is straightened out I had to figure out what to share first and it was an easy answer …Muffins!! I love Muffins!! Plus muffins seem to be the favorite posts of mine so…. You can never have too many muffin recipes and I am always searching for that perfect muffin.  That muffin that is sweet, but not too sweet and moist and tender.

Chocolate Peanut Butter Muffins

Muffin, muffin who’s got the muffin!!  Oh wait that’s button, button but I like muffin’s so much better.  My life is going through a bit of a transition (more about that another time) and my blogging has been suffering but I am attempting to get back on track.

So here is a new muffin recipe.  I love mini muffins, they are bite size so when you have a few you feel satisfied but not like you are over eating.  If you prefer you can make them as 12 large muffins (adjust the baking time to about 18-20 minutes).

The muffins are chocolate with a hint of peanut butter and lots of chocolate chips.  The peanut butter just adds a subtle flavor to the chocolate and boosts the yum.  They are delicious for an afternoon snack or as the start of a sweet morning.

Chocolate Peanut Butter Muffins
1 ¼ cup flour
⅓ cup brown sugar
⅓ cup cocoa
1 Tbsp baking powder
1 cup chocolate chips
⅓ cup butter, melted
⅔ cup peanut butter
1 egg, beaten
1 cup milk
1 tsp vanilla
Preheat oven to 400. Grease or line mini muffin tins.
Mix flour, brown sugar, cocoa, and baking powder.
Stir in chocolate chips.
In a separate bowl mix butter, peanut butter, egg, milk and vanilla.
Add wet mixture to dry mixture.
Stir until combined.
Spoon batter into mini muffin tins.
Bake 10-12 minutes.

Makes 36 mini muffins

Chocolate Mini Muffins

 

I love muffins.  They are the perfect combination of breakfast and dessert and who doesn’t need an excuse to eat dessert for breakfast.  So I make muffins a lot and mini muffins are my favorite because you can eat more than 1 and go back for more.  I am on the search for the perfect chocolate muffin, one that is that perfect amount of chocolate but not too much because it is morning.  This recipe is pretty close; they are pleasingly chocolatey without being too much. 
In fact they remind me of the chocolate birthday cake my Gram always made.  These muffins are healthy-ish too (at least that’s what I tell myself) because I used yogurt and part of the flour is wheat flour.  I enjoyed them hot out of the oven but am enjoying them even more the next day.  Oh and I used my Valentine’s Day muffin pan just because it’s 2 weeks until Valentine’s Day J Hope you have a sweet morning!!

 

Chocolate Mini Muffins

⅔ cup granulated sugar
1 cup flour
1 cup whole wheat flour
2 tsp baking powder
¼ tsp baking soda
¼ cup cocoa
¾ cup chocolate chips
6 Tbsp butter
1 tsp vanilla extract
2 eggs
¾ cup lowfat vanilla yogurt

Preheat oven to 400. Line mini muffin tins or spray with cooking spray.

Mix dry ingredients: sugar, flour, whole wheat flour, baking powder, baking soda, and cocoa

In a microwave safe bowl combine butter and chocolate chips. Microwave 1-2 minutes, until chocolate chips are melted (be careful not to over microwave, it took me about 1 ½ minutes). Stir until smooth. Add wet ingredients: vanilla, eggs, and yogurt. Stir well.

Add the wet ingredients to the dry ingredients and mix until the dry ingredients are just incorporated.

Use a tablespoon to scoop batter into the mini muffin tins.

Bake 10-12 minutes.

Cool on a wire rack.

Makes 36 mini muffins

Oatmeal Chocolate Chip Mini Muffins

I was in the mood for muffins again and I’m always in the mood for chocolate chips so I mixed up these sweet little muffins.  I made a batch yesterday and they were soooooooooooooo good that I made another batch today (the fact that we ate all 36 muffins might have something to do with it). 

Oatmeal Chocolate Chip Muffins

Every time I walked into the kitchen I had to try another to make sure they were alright (they were J). 

They are the perfect combination of chocolate and oatmeal.  A little sweet, a little chocolate, a little bit of texture.  All in all just perfect to start your sweet morning.

 

Oatmeal Chocolate Chip Mini Muffins

2 tsp baking powder
¼ tsp baking soda
¾ cup mini chocolate chips
1 cups quick oats
6 Tbsp butter, melted
1 tsp vanilla extract
2 eggs
¾ cup lowfat vanilla yogurt

Preheat oven to 400. Line mini muffin tins or spray with cooking spray.

Mix dry ingredients: sugar, flour, baking powder, baking soda, mini chocolate chips, and quick oats

Combine wet ingredients: butter, vanilla, eggs, and yogurt.

Add the wet ingredients to the dry ingredients and mix until the dry ingredients are just incorporated.

Use a tablespoon to scoop batter into the mini muffin tins.

Bake 10-12 minutes.

Cool on a wire rack.

Strawberry Chocolate Chip Mini Muffins

Muffins, muffins I love muffins!!!  Perfect for breakfast and when they are mini muffins you can eat a few and not feel the guilt.  They are mini so the calories must be minature too or at least that’s what I tell myself 🙂

My daughter found strawberries at the store and had to have them so……I made some muffins.  They contain both white and wheat flour, yogurt, and strawberries (so they are a little healthy).

The strawberries add a sweetness and a bit of color to the chocolate chip muffins. Perfect for a sweet morning!

Strawberry Chocolate Chip Mini Muffins

Lemon Oatmeal Muffins

Muffins…a sweet, sort of healthy way to start your day.  Ok so they really aren’t that healthy but at least I am eating breakfast, right?  And these muffins have oatmeal, wheat flour, yogurt and lemon so see there is some healthy parts to the muffins.  

We have been having a big debate over how much lemon flavor is too much.  These muffins are for you if you like full on, slight pucker to your mouth lemon flavor.  If, like my daughter, you like a little less lemon reduce the lemon juice to ¾ cup. The oatmeal adds a welcome bit of texture to the muffins.  Hope they add to your sweet morning.


Lemon Oatmeal Muffins

⅔ cup sugar
1 cup flour
1 cup whole wheat flour
2 tsp baking powder
¼ tsp baking soda
1 cup oatmeal
1 stick butter, melted
1 tsp vanilla
2 eggs
¾ cup lowfat plain yogurt
1 cup lemon juice

For the Glaze:
1 cup confectioners sugar
2 Tbsp lemon juice

Preheat oven to 400. Line a muffin tin or spray with cooking spray.

Mix dry ingredients: sugar, flour, whole wheat flour, baking powder, baking soda, and oatmeal.

Combine wet ingredients: butter, vanilla, eggs, yogurt, and lemon juice.

Add the wet ingredients to the dry ingredients and mix until the dry ingredients are just incorporated.

Use a ⅓ cup measuring cup to scoop batter into the muffin tin.

Bake 18-20 minutes.
