Some Monday’s I just don’t feel like something new and return to a tried and true Meatless Monday favorite and it seems like many of our favorites have a Mexican flavor profile.
Enchiladas have always been a family favorite and Sweet and Spicy Enchiladas are no exception! I will make a few extra just to ensure I have some leftover for lunches! They can be made ahead of time and frozen which makes them perfect for a busy day. Filled with sweet potatoes, beans, salsa, and melted cheese they are unique and delicious. The hint of sweetness from the sweet potato adds just the right counterpoint to the spice of the salsa.

Vegetarian Burritos are another twist on wrapping vegetables in a tortilla. Tomatoes, bean,s and corn mixed with cheese and wrapped in a tortilla for a delicious dinner.
