Meatless Monday Buffalo Chili Potato

I love the flavor of buffalo wings and am always looking for new, healthier ways to incorporate it into meals (Buffalo Beer Dip, Slow Cooker Vegetarian Buffalo Potato Soup, Warm Potato and Broccoli Buffalo Salad) so when I was struggling to find a meal for Meatless Monday I latched on to the Vegetarian Taco Potatoes I made a few weeks ago. What would be even better than taco? Buffalo Wings!!!! After that decision the meal came together quickly.

Vegetarian Buffalo Chili Potatoes

Bake 4 potatoes, you can do it ahead of time or in the microwave or however works in your schedule. Just make sure to pierce them with a fork before baking. Meanwhile, over medium low heat warm the kidney beans and the buffalo wing sauce for 20-30 minutes. When the potatoes are ready scoop out the inside and add to the kidney beans. Add blue cheese crumbles and blue cheese dressing, stir and heat about 10 minutes. Scoop the mixture back into the potato skins and serve with blue cheese crumbles and blue cheese dressing.

  • 1 can kidney beans, rinsed & drained
  • ¼ cup buffalo wing sauce
  • 3 tsp blue cheese crumbles
  • 2 Tbsp blue cheese dressing
  • 4 potatoes, baked
  • Blue cheese crumbles
  • Blue cheese dressing

Instructions
