Vegetarian Thai Fried Rice is a delicious, quick to make dinner for Meatless Monday. It has a touch of heat kicks the fried rice up a notch.

I love fried rice and when we had Thai Basil Fried Rice for the first time I was over the moon!!! It took the fried rice I like and turned it up with some heat!! I had to find a way to recreate it at home because I crave it more often than I can get to the Thai restaurant. I found a Thai Garlic Chili Pepper (Sriracha Sauce) at my grocery store and mixed it with some Rice Wine Vinegar and ½ tsp of dried basil for the sauce.  It also helps to have several cups of cooked, cool rice on hand, left over rice is perfect or can make rice and allow it to cool ahead of time.

Meatless Monday Thai Fried RiceTo put Vegetarian Thai Fried Rice together heat about 1 Tbsp of olive oil in a frying pan (or wok) and add onion, carrots, minced garlic, and mushroom (or the vegetables you have on hand and prefer) stirring and allowing to soften about 7 minutes. Move the vegetables to the edge of the pan and add 2 eggs to the pan and quickly scramble the eggs. When they are cooked stir them into the vegetables, add rice, sauce, and peas. Stir and allow to heat through about 10 minutes.  In less than 30 minutes a delicious, vegetarian meal is on the table!!

Vegetarian Thai Fried Rice

Ingredients

  • 2 cups, cooked & cooled rice
  • 2 Tbsp Rice Wine Vinegar
  • 1/4 cup Thai Garlic Chili Pepper Sauce (Sriacha Sauce)
  • 1/2 tsp basil
  • 1/2- 1 cup carrots, diced
  • 1/2 medium onion, diced
  • 2 cloves garlic minced
  • sliced mushrooms (small can, drained)
  • 2 eggs
  • 1-2 cups peas

Instructions

    For the Sauche:
  1. Mix together Thai Garlic Chili Pepper (Sriracha Sauce) with Rice Wine Vinegar and ½ tsp of dried basil.
  2. Heat about 1 Tbsp of olive oil in a frying pan (or wok) and add onion, carrots, minced garlic, and mushroom (or the vegetables you have on hand and prefer) stirring and allowing to soften about 7 minutes.

    1. It is not in a red bottle… Found it in the Thai aisle of my grocery store and the bottle says Garlic Chili Pepper Sauce (Siracha Sauce)
