Slow Cooker Potato Ham(bone) Soup is everything I love in a soup!! Filled with flavor and vegetables and cheese and because it’s made in the slow cooker easy to make! Reminiscent of a Loaded Baked Potato Soup but the ham and carrots kick it up a notch!!
In the past I’ve made Ham and Potato Soup and its ok but not amazing so I started changing it up and this version is AMAZING!!!! I had a ham bone saved and used it to build the flavor but don’t worry if you don’t have one. Just substitute 6 cups chicken or vegetable broth for the water and add 1-2 cups chopped, cooked ham.
Did I mention how easy this is to make? I love making meals in the slow cooker (Slow Cooker Vegetarian Buffalo Potato Soup, Slow Cooker Pork Roast with Carrots & Potatoes, Slow Cooker Vegetarian Chili), add the ingredients in the morning and dinner is waiting when you get home!! In your slow cooker add the onion, carrots, potatoes, and garlic. Put the ham bone in the center. Pour 6 cups of water in (make sure to cover the ham bone, adding more water if necessary). Cook on high for 7-8 hours. 30-45 minutes before eating remove the ham bone and cut the meat from it into bite size pieces making sure to discard any fat). Using an immersion blender blend to smooth (or purée in batches in a blender). Add in ham and 1-2 cups shredded cheese and stir. Cover and allow to continue cooking for at least 30 minutes or until cheese is melted. If you aren’t using a hambone add the cooked ham with the cheese after pureeing the soup.
So easy and delicious!!! The pureed vegetables and melted cheese make the soup creamy!! The leftovers were fought over and bowls licked clean!!

- 1 hambone
- 6 cups of water or enough to cover ham bone
- 4-6.potatoes, chopped
- 1 cup diced carrots
- ½ onion, diced
- 2-4 cloves minced garlic
- Pepper, to taste
- 1-2 cups shredded cheddar or Colby jack cheese
- Put everything except cheese in slow cooker and cook on high for 7-8 hours
- About 30 minutes before serving remove ham bone making sure to get all of the fat.
- Use an immersion blender to purée soup (or purée in small batches in blender).
- Remove ham from bone and return ham to soup. Stir in 1-2 cups cheese. Cook an additional 30 minutes to allow cheese to melt.
If you don't have a ham bone you can substitute 6 cups of vegetable or chicken broth for the water and 1-2 cups chopped, cooked ham.
After pureeing the soup add the chopped, cooked ham with the cheese.
