Sometimes Meatless Monday rolls around and takes you by surprise. On those nights I call on the quick and easy Vegetarian Kung Pao Noodle Bowls.

Vegetarian Kung Pao Noodle Bowls

In a frying pan heat olive oil and add chopped onion, about 2 cloves minced garlic, ½ tsp ginger (I never have fresh but always have some in my spice drawer), and whatever vegetables you have on hand and think will taste good in a noodle bowl- I am partial to peppers (green and red) and broccoli (I used frozen straight from the freezer). Meanwhile cook a pot of linguine, fettucine, or whatever spaghetti type noodle you have in the house. When the noodles are cooked and the vegetables softened, about 10 minutes, drain the noodles and add to the frying pan. Pour in a Kung Pao sauce and toss. A delicious, Meatless Monday meal on the table in less than 30 minutes.

Ingredients

  • 1Tbsp olive oil
  • 1/2 onion, chopped

  • 1/2 tsp ginger
  • 1-2 cups broccoli
  • 1-2 cups peppers, green or red, chopped
  • ~1.4 - 1/2 bottle bottled Kung Pao Sauce
  • Linguine, fettucine, or spaghetti

Instructions
