It’s Meatless Monday and this Vegetarian Taco Casserole is another example that a meal doesn’t need meat to be delicious! Tomatoes, beans, corn, salsa, with lots of cheese topped with tortillas and baked up like a taco lasagna.

Meatless Monday Vegetarian Taco Casserole

My family loves tacos and anything with Mexican flavors is a hit as you can see by all the Mexican flavored Meatless Monday meals I’ve posted (Vegetarian Taco Soup, Sweet and Spicy Enchiladas, Roasted Vegetable Quesadillas) . This Vegetarian Taco Casserole takes their favorite flavors and combines them into a yummy, meatless meal.

Meatless Monday Vegetarian Taco Casserole Sauté the onions and jalapeño in a little olive oil until softened. Add the beans, tomatoes, and corn and cook until heated. Mix in half the cheese and part of the salsa (add as much or little as your family likes. Meanwhile spray a casserole dish and cover the bottom with 3 tortillas. When the cheese is melted pour into the pan. Cover the mixture with 3 more tortillas, salsa, and rest of the cheese. Bake at 375 for about 30 minutes or until heated through and the cheese is melted. Let rest for a few minutes before serving and it is easier to scoop.

Vegetarian Taco Casserole

Ingredients

  • 1 Tbsp Olive Oil
  • ½ small onion, minced
  • Jalapeño, minced
  • 1 can (14.5-15.5 oz) black beans
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups corn
  • 1 tsp cumin
  • 1-2 cups shredded Colby Jack or Cheddar Cheese
  • 1-2 cups salsa

Instructions

  1. Sauté the onions and jalapeño in a little olive oil until softened.
  2. Add the beans, tomatoes, and corn and cook until heated.
  3. Mix in half the cheese and part of the salsa (add as much or little as your family likes.
