Slow Cooker Vegetarian Chili

 

Every winter Tom begs for chili so when Meatless Monday rolled around he was willing to try a vegetarian version. This Slow Cooker Vegetarian Chili is super easy since it’s made in the slow cooker. Put everything in the slow cooker before work in the morning and when you get home the house will smell delicious and dinner will be ready!! Serve with shredded cheese to top it and crusty bread for a delicious Meatless Monday dinner!

Slow Cooker Vegetarian Chili

This is so easy to make!! Spray your slow cooker for easier clean up. Add chopped onion, carrots, and minced garlic. Drain the kidney beans and rinse them well. Add to the slow cooker along with the cans of tomatoes and tomato sauce. Fill the tomato sauce can with water and add to slow cooker (if you like your chili soupier add a 2nd can of water). Add the Worstershire sauce, chili powder, and oregano. Mix everything together. Start the slow cooker, low for 7-8 hours or high for 4 hours. When you come home dinner is waiting!!

Slow Cooker Vegetarian Chili

Ingredients

  • 1 onion, diced
  • ½-1 cup carrots, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can diced tomatoes with chills
  • 1 can kidney beans
  • 1 small can tomato sauce (refill can with water and add x 2)
  • 1 Tbsp Worstershire Sauce
  • 1 Tbsp chili powder
  • 1 tsp oregano
  • 1 cup zucchini, optional
  • Grated cheddar cheese for garnish (optional)

Instructions

  1. Spray your slow cooker for easier clean up.
  2. Add chopped onion, carrots,zucchini (if using) and minced garlic.
  3. Drain the kidney beans and rinse them well. Add to the slow cooker along with the cans of tomatoes and tomato sauce.
  4. Fill the tomato sauce can with water and add to slow cooker (if you like your chili soupier add a 2nd can of water).
  5. Add the Worstershire sauce, chili powder, and oregano. Mix everything together.
  6. Start the slow cooker, low for 7-8 hours or high for 4 hours.
