Slow Cooker Pork Roast with Vegetables

This Slow Cooker Pork Roast with Carrots and Potatoes recipe is courtesy of my brother in law. Years and years and years ago he made this recipe, must have been for my parents, and when they made it for me I knew I had to make it! It was the first recipe that my daughters willingly ate the carrots (and if I’m being honest, me too). The carrots and potatoes are so flavorful that 4 of us usually eat a full pound of baby carrots, along with the pork and potatoes.  But the best part is how easy it is to make.

Slow Cooker Pork Roast with VegetablesPeel the potatoes and cut them into pieces. Put the potatoes in a slow cooker with a bag of baby carrots (alternatively you can chop up full size carrots) and a pork roast. I have used all variety and sizes of pork roasts and they all work equally well, especially when you have them in the slow cooker all day, so use what you like in a size to suit your family (I usually buy a large one when they are on sale and cut it into a smaller size). Pepper the pork roast and here is the secret, add an entire bottle of Lea and Perrins Marinade for Chicken (it used to be called White Wine Worstershire Sauce) and then fill the bottle with water and pour that in as well. Put the cover on and cook on low for 8 hours.

As the day progresses the house will fill with a delicious aroma. When it’s time to eat the pork will be fork tender, serve with the remaining sauce and the vegetables.

Ingredients

  • 1 lb baby carrots
  • 3-4 potatoes, peeled and cut
  • pork roast
  • 1 bottle Lea and Perrins Marinade for Chicken
  • water
  • pepper

Instructions

  1. Spray the Slow Cooker.
  2. Add the carrots, potatoes, and pork roast.
  3. Pepper the pork roast.
  4. Pour the entire bottle of Lea and Perrins Marinade for Chicken over the pork roast and vegetables.
  5. Fill the bottle with water and add to the slow cooker.
  6. Cover and cook on low for 8 hours.
