It’s Meatless Monday and this Vegetarian Taco Casserole is another example that a meal doesn’t need meat to be delicious! Tomatoes, beans, corn, salsa, with lots of cheese topped with tortillas and baked up like a taco lasagna.

It’s been a hectic and busy week around here. We’re slowly getting back into the swing of things. I’ve yet to finish my list of goals for the year, nor have I finished my list of must-do blog posts. I have several recipes and crafts in various stages, so it seems that I should be focusing on getting these finished before I take on anything new. Not going to happen. Funtastic Friday #57 is one of our best parties to date…thanks to all of you!
Buffalo Chicken and Potatoes is just a little hot with flavor of buffalo wing sauce but it is cooled off by the cheese. The broccoli adds a little color and a vegetable that kids won’t mind eating. You can even make this vegetarian by leaving out the chicken.

The writing chronicles her journey after the demise of Gourmet magazine as she searched for herself and the next step in her life. The recipes correspond with what she was making and feeling and the seasons. The recipes sound AMAZING!!! My copy is studded with post it’s marking the recipes I want to try. The photographs, of her world and her food, enhance the book.

Hope you all had a great holiday! We sure did…but I’m glad they’re over. I ate way too much, slept too long, and generally vegged out! I did take the opportunity to finish up a few handmade things, and I made a couple of homemade liqueurs. I can’t wait to see what you’ve all been up to while we were on break.
