Mint  Chip Cookies add a mint surprise to what looks like a chocolate chip cookie.

Mint Chocolate Chip Cookies

Once upon a time there were mint chips that were all chocolate with mint flavoring mixed in.. They were minty, chocolatey goodness and the baked goods made with them were AMAZING!!!! It’s been over 10 years since they were made like that but luckily during December you can find Winter morsels which are a mix of green, mint morsels and chocolate morsels. I stock up on bags and bags of them before they disappear so I can bake with them in months other than December.

Originally these cookies were made as Mint Snowballs. For the last several years they were requested but were the cookies hanging around. I wasn’t super fond of them so this year I did a tweak of the recipe, I swapped out the vegetable oil and replaced it with butter (can you hear my sister screaming? She likes the old version of the cookie). This swap resulted in a less snowball, more cookie cookie. And I confess I like the flavor better.

Mint Chip Cookies

Yield: 4 dozen cookies

Mint Chip Cookies

Mint Chip Cookies add a mint surprise to what looks like a chocolate chip cookie.

Ingredients

  • 1 ¼ cups sugar, divided
  • ¾ cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 ½ cups flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 10oz pkg of Mint Chocolate Chips

Instructions

  1. Preheat oven to 350.
  2. In a medium bowl combine flour, baking powder, and salt. Mix and set aside.
  3. In a large bowl combine 1 cup sugar and butter. Mix well.
  4. Beat in eggs and vanilla extract.
  5. Gradually add in flour mixture.
  6. Stir in mint chips.
  7. Shape into balls using a rounded Tablespoon of dough.
  8. Roll dough balls in remaining ¼ cup of sugar.
  9. Place on a cookie sheet covered with parchment paper.
  10. Bake 8-10 minutes.
