Chocolate Mint Pinwheel Cookies

I have a love, hate relationship with rolled cookies… Pinwheels, whirligigs and the like. I love the taste but they can be a PAIN to make!! I have little patience for rolling out dough, spreading filling, rolling jelly roll style, and chilling dough. When I make cookies I want to be sampling them quickly and not waiting for dough to chill. At the same time I love the flavor of rolled cookies, the tender dough enhanced by the fillings are delicious! Plus the pinwheel effect is pretty! So these cookies present a dilemma, they are delicious and Tom thinks they taste like Christmas candy but they take time and patience before you can eat them.

Chocolate Mint Pinwheel CookiesOnce you mix the dough roll it out, rolling between 2 sheets of wax paper minimizes the mess. Divide the dough and chips in half and it will be easier to handle.  Melt mint chocolate chips, spread on the dough. Here you can add sprinkles or nonpareils on top of the melted chips to add color (I didn’t in this batch and I wish I had). Roll the dough up jelly roll style, wrap in wax paper and chill the dough for about 20-30 minutes. Coat the outside of the dough with sprinkles or nonpareils and slice into cookies. Place the cookies on parchment covered baking sheets and bake.

Let cool a little and finally, finally take a bite!! The mint in the middle adds a delightful, candy-like surprise to the chocolate cookie of these Cocomint Whirligig Cookies.

Cocomint Whirligig Cookies

Yield: 3-4 dozen cookies

Cocomint Whirligig Cookies

Cookies that taste like candy are a favorite and these Cocomint Whirligig Cookies fit the bill. Chocolate and mint cookies that taste like a holiday candy.

Ingredients

  • ½ cup butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ cup cocoa
  • 1 ¼ cups flour
  • ½ tsp baking soda
  • 1 cup mint chips
  • Colorful nonpareils for decoration

Instructions

  1. Combine butter, granulated sugar, and brown sugar and mix until fluffy.
  2. Add egg and vanilla extract.
  3. Mix in flour, cocoa, baking soda, and salt.
  4. Dump dough onto wax paper. Cover with another sheet of wax paper.
  5. Roll into a rectangle ¼ inch thick.
  6. Melt mint chips and spread on dough.
  7. Sprinkle with sprinkles or nonpareils.
  8. Roll dough jelly roll style.
  9. Wrap and chill.
  10. Preheat oven to 375.
  11. Slice roll into ¼ slices.
  12. Place slices on baking sheet lined with parchment paper.
  13. Bake 10-12 minutes.

Notes

Roll dough out between 2 sheets of wax paper, it is a quick, clean, nonstick rolling surface and it helps when rolling into a jelly roll.

It is helpful to cut dough into 2 rectangles. Melt half the mint chips, spread on 1 roll, roll up & chill. If the chocolate hardens before rolling it is a disaster.
