Candy Cane Bar Cookies combine the peppermint essence of the Holiday season with chocolate in a delicious cookie. Candy Cane Bar Cookies are buttery cookies filled with chocolate chips and crushed candy canes topped with melted chocolate and crushed candy canes. Major Holiday yum!!!Peppermint Bar Cookies

 

I LOVE cookies but I will be honest I do not like scooping them into balls or rolling them and then cutting them out. Your fingers get sticky, it’s messy, and I will admit it I am lazy. I like the convenience and less mess of a bar cookie. Plop the dough in the pan, spread it out with a spatula and pop it in the oven. Quick, easy, and virtually mess free! So when I was thinking about making a new cookie of course I was going to make a bar cookie! I wanted chocolate (no surprise) and since it’s the Holiday season wanted mint.

Candy Cane Peppermint Chocolate Bar Cookies

I went on a mission to find mint chips, I’ve used them and loved them in years past for my Mint Snowball Cookies and my Chocolate Mint Brownies but NO WHERE has them!!!!! Not the 5 grocery stores I visited or Target!! (Note: Mom just called & she found Mint Chocolate Chips at Walmart! Will have to see if mine has them) I had to improvise and decided candy canes would provide the mint flavor I was looking for. To use them in the cookie I crushed them in my food processor. 3 candy canes for the cookie and another 3 Candy canes for the topping. I pulsed them down to very fine pieces and lots of candy cane dust and really like the results!! I guess I could have used Peppermint Extract but the crushed candy canes add color and texture.

The cookies have  a buttery, almost shortbread like, base with chocolate chips and candy cane mixed in. The topping is melted chocolate chips with the crushed Candy canes adding flavor and color. Yum!!!! Perfect on a cookie tray!!!

 

 

Candy Cane Peppermint Chocolate Bar CookiesTo melt the chocolate on top just sprinkle chocolate chips on the bar cookies and cover them with a lid or baking sheet. Wait about 10 minutes, remove the cover and careful spread the chocolate chips, now soft and melty, on top. Sprinkle with the crushed candy canes and the cookies are finished.

Candy Cane Bar Cookies

Cook Time: 20 minutes

Yield: about 24 bar cookies

Candy Cane Bar Cookies

Candy Cane Bar Cookies are buttery cookies filled with chocolate chips and crushed candy canes topped with melted chocolate and crushed candy canes. Major Holiday yum!!!

Ingredients

  • ¾ cup butter (1 ½ sticks), softened
  • ¾ cup sugar
  • 1 egg
  • 1 ½ tsp vanilla extract
  • 2 ¼ cups flour
  • ½ tsp salt
  • ¼ cup crushed candy canes (about 3)
  • ¾ cup chocolate chips
  • Topping:
  • ¾ cup chocolate chips
  • ¼ cup crushed candy canes (about 3)

Instructions

  1. Preheat oven to 375
  2. Spray a 13x9x2 pan with cooking spray
  3. Mix butter and granulated sugar until fluffy.
  4. Add egg and vanilla extract. Mix until well combined.
  5. Add in flour and salt. Mix until combined.
  6. Stir in chocolate chips and crushed candy canes.
  7. Spread in prepared pan.
  8. Bake for about 20 minutes or until it is set.
  9. Remove from oven and immediately sprinkle with remaining chocolate chips.
  10. Cover with a baking pan or aluminum foil to trap the heat.
  11. When the chips have melted, spread evenly over the top.
  12. Sprinkle crushed candy canes on top.
