This is the recipe that started my family’s conversion to willing vegetable eaters. When there is an abundance of vegetables they ask for it weekly and I don’t mind because it’s a fairly easy meal. I think it’s the caramelized onion, it makes them think they are having some diner food when really it’s all veggies. The bread helps too, use something fancier than your every day sandwich loaf, we like a multigrain from the bakery section of the grocery store.

Well, it’s barely a recipe….more a list of potential ingredients for a veggied up grilled cheese sandwich. Start by getting your onions caramelizing. Once they are going slice the vegetables – our favorites are eggplant and zucchini – season both sides with an Italian seasoning mix and grill the veggies. I use a Foreman grill, it grills both sides without having to turn them, but a grill pan, grill, or even a frying pan will work. When you are preparing the vegetable think about how many slices of each vegetable will cover the bread- you are aiming for a full layer of each vegetable and the number of slices will depend on the size of your bread and the vegetables.

 

When the vegetables are grilled tender prepare the sandwiches. Layer the bread with shredded cheese (we like mozzarella but choose your family’s favorite), a layer of eggplant, a layer of zucchini, a layer of caramelized onion, a slice of tomato (we don’t grill these & not everyone in my family likes these so I leave them off the kids), more shredded cheese, and top layer of bread. Put the sandwiches back on the grill and grill until cheese is melted and the bread is golden. Slice and enjoy!!!

If you don’t like the vegetables I used try your favorites or leave something out. What goes in the sandwiches can vary based on what you like and what you have available. Get creative and make them your own.

  • bread, sliced (multigrain, french, etc.)

  1. Can I just put ALL of the vegetables on these amazing sandwiches? This sounds simply divine – easy and so full of flavor. I would absolutely use the veggies you have here… maybe add a roasted red pepper? But yes, so many combinations would work and be scrumptious. Question: What’s your go-to method/temperature/instructions for caramelizing onions? Sometimes I get them perfect and other times they’re not quite right. Thanks for a fabulous recipe!

    1. Have yet to find a perfect method for caramelizing onions, like you sometimes they are good and other times not so much…maybe someone has a solution?
