I love books about women finding their way and families finding their way back together and that is what Nancy Thayer writes about. An Island Christmas is no exception. Jilly has a tenuous relationship with her daughter Felicia and doesn’t understand her life or why she’s marrying Archie. So when Felicia decides to come home to Nantucket at Christmas to get married Jilly takes over and plans the wedding she wants not the one one Felicia wants. Plus she’s going to meddle and try to get Felicia to change her mind and not marry Archie. Add in Felicia’s perfect sister and her family and the house is bursting at the seams. Set in snowy, Christmasy Nantucket this is an enjoyable book to read as you sneak a few minutes of relaxation in the Holiday season, think beach read for the holiday (is holiday read a thing?).
Since this book was set at Christmas time I was craving cookies as I read. What I came up with were these Chocolate Shortbread Cookies with Peanut Butter Chips. You can never go wrong with peanut butter and chocolate and when it is in a buttery shortbread cookie even better. I rolled the dough out and used cookie cutters to correspond with the holiday theme but if you are not so inclined or it’s not the holidays they can be sliced into sticks (a pizza cutter makes easy work of this). Don’t be alarmed when you start in the dry ingredients and it looks like there is no way it will ever become a cookie, be patient it will combine.

Chocolate shortbread cookies with peanut butter chips
- ½ cup butter, softened
- ¼ cup sugar
- ½ tsp vanilla
- ¾ cup flour
- ¼ cup cocoa
- ½ cup peanut butter chips
- Preheat oven to 350. Cover a baking sheet with parchment paper.
- Beat butter, sugar and vanilla until fluffy.
- Add flour and cocoa and mix until combined. It will look dry & like its never going to mix, be patient & mix on low, it will mix.
- Stir in chips.
- Roll into 8x8 square. Cut into sticks
- Place on parchment covered baking sheet.
- Bake 10-12 minutes.
Recipe is easily doubled.
