It’s Thursday so I am going to Throw it Way back to a post from 2011. When I first posted these Chocolate Chip Shortbread cookies were my go to cookie but shortly after I originally posted I stopped making them. Not really sure why but I honestly don’t remember the last time I made these cookies, I’m guessing last Christmas. With the Holidays fast approaching I want to start making cookies so I’m prepared and these seemed like the perfect ones to start with, not holiday specific and they freeze and thaw well (do you freeze your cookies? It’s a great way to control your cookie intake, when you are making lunch or dinner take out a cookie or 2 for a sweet treat after you eat, they will defrost while you are eating. Plus having cookies in the freezer means you will never be unprepared for an unexpected guest.)
These are AMAZING!!!! Really, I don’t know why I ever stopped making them!!! They are tender and buttery and chocolaty and melt in your mouth!!!! Plus, being bar cookies you can exercise portion control by cutting them into smaller cookies. Did I mention how easy they are to mix up? Only takes about 5 minutes (as long as you remember to take the butter out) and there are only 5 ingredients!!!

- 1 cup (2 sticks) Butter, softened
- 1/2 cup Sugar
- 1 tsp Vanilla Extract
- 2 cups Flour
- 1 cup Mini Chocolate Chips
- Preheat oven to 350.
- Lightly grease 13x9x2 pan.
- Cream butter, sugar, and vanilla until fluffy.
- Add flour and mix until incorporated.
- Stir in mini chocolate chips.
- Pour into prepared pan. Smooth top.
- Bake 18-20 minutes or until firm.
