When I was reading Summer Cottage by Susan Kietzman I started thinking about my own family and the time we spend at our family beach house. When we were growing up we spent several weeks to all summer at my Grandparent’s place at Rehoboth Beach. I remember sun & lots of togetherness & on weekends having ‘cocktail hour’, basically the whole family gathered before dinner for snacks – usually cheese and crackers or if we were lucky onion dip and potato chips- & the adults had ‘adult beverages’. The onion dip was made from a pack of Lipton’s Onion Soup mix and our chips of choice were ruffled. These days, much like the family in the book, we are grown with families of our own and it is unusual for all of us to be at the beach at the same time but when we do we have ‘cocktail hour’ and of course onion dip. In the book they even have a similar evening and serve onion dip!!
A few weeks ago I was reading a book about family and for some reason I started craving Oatmeal Chocolate Chip cookies. I hadn’t had them or thought about them in years but growing up it was my Mom’s and Gram’s go to cookie, they made them a lot!!! And I loved them!! The crunch of the crisp cookie, the sweetness of the brown sugar, the texture of oatmeal making them ‘healthy’ and of course just the right amount of chocolate from the chocolate chips, YUM!!! And once I started to think about them I had to have them and they are just as good as I remembered!!
My family LOVES Stromboli and I usually make it with lots and lots of sandwich meat. It tastes excellent but the sandwich meat is just not good for us. So continuing on my quest to make healthier meals I decided to make a Stromboli that was delicious but much, much healthier for us and so the Roasted Vegetable Stromboli was born!!! Chock full of vegetable goodness and melted mozzarella cheese it is a winner!! Perfect for a Meatless Monday Meal!!
After making new foods and eating all week I have to get up and MOVE!! My exercise of choice is walking and hiking. So most weekdays I would put on my sneakers and head out my front door for a walk but when we moved to Tennessee 2 years ago I was no longer able to do that. Our house is on a curvy road and forget sidewalks most of the way doesn’t even have shoulders, just ditches or cliffs, so a quick walk was out. So I had to find somewhere to walk – close and safe and if the scenery was pleasant even better. Lucky for me there is a state park 15 minutes from my house!!
I am a voracious reader!! I LOVE books!!!! All kinds of books!! And I am constantly reading and typically have more than 1 book going – usually a fiction, a nonfiction that I am not racing to finish, and at least 1 cookbook- and I read both physical books and ebooks. I am a librarian and even when I don’t have my own library I rely heavily on a public library to keep me supplied (mine has ebooks which is AMAZING when I finish a book on a Sunday night or holiday and am DESPERATE for another book) because I can try out a variety and don’t feel the weight of commitment purchasing a book gives me. So what does this rambling have to do with a food blog you are asking? When I read I find myself thinking of food, either because it is a book that includes recipes (and I’m not just talking about cookbooks) or something about it (setting, characters are always eating a specific food, etc.) just leads me to food. Long story short, I’ve decided to devote several posts a month to combining my 2 loves- food and books. I will give a quick review of a book and either make something from it or inspired by it.
Still fine tuning the blog….Wanted to provide the option of following the blog on Bloglovin’ & here it is!!!

For the first 26 years of our marriage Tom had an absolute whiny fit any time I served a Meatless Meal. It didn’t matter if it was pizza without pepperoni or sausage, or pasta with no meat, or any other meatless meal. He didn’t like it and just wasn’t having it!!! Then all of a sudden this year something happened – not only would he eat a Meatless Meal but he was requesting them!!! We’ve been eating at least 1 and more often multiple Meatless Meals a week for the last several months!!!
So I’ve finally done it!! I’ve thought about it for a LONG time!! For months I’ve been debating and actually didn’t post because I couldn’t decide what to do with the blog…well I’ve missed it and I like the name and idea of it so I decided to move it and get back to it!! So hear we go!! New address and new posts!!!
I know, I haven’t posted in forever… It’s not that I haven’t been making yummy recipes that I want to share, its just that I always forget to take pictures of the yummy food. Really and truly when I make something we are usually so anxious to eat that by the time I remember that I want to take a picture all the yumminess has been consumed and all that’s left is dirty dishes! But I’ve put my family on notice and we are going to remember to take a picture or 2 before we dig in…at least usually.
So now that that is straightened out I had to figure out what to share first and it was an easy answer …Muffins!! I love Muffins!! Plus muffins seem to be the favorite posts of mine so…. You can never have too many muffin recipes and I am always searching for that perfect muffin. That muffin that is sweet, but not too sweet and moist and tender.
