Its another glorious hot summer morning in North Carolina. I have not needed to make a lot of new breakfasts because we had to finish up the muffins from last week and of course the weekend meant pancakes. Last weeks muffins are gone and I was hungry for something different. I of course wanted chocolate but I didn’t want any of the usual muffins so I came up with something new, oatmeal chocolate chip muffins. I was very pleased with the way they turned out! Just the right mix of texture and chocolate. These definitely are worth making again and again!! Hope they help to make your morning sweet!
Oatmeal Chocolate Chip Muffins
1 ¼ cup all purpose flour 1/3 cup brown sugar
1 Tbsp baking powder 1 cup quick oats
1 cup chocolate chips 1 egg
1 cup milk 1/3 cup butter, melted
1 tsp vanilla
Preheat oven to 400
Grease muffin tin
Mix flour, brown sugar, baking powder and oats
Stir in chocolate chips
In a separate bowl lightly beat egg
Add milk, melted butter, and vanilla to egg. Stir well.
Add milk mixture to flour mixture. Stir until moistened
Spoon batter into muffin tins
Bake 20-25 minutes
Makes 12 muffins
Sweet Monday Morning! I’m sorry but that just sounds wrong. The two just don’t seem to fit together. O.k. let’s see if I can try to make them fit. I suppose it is sweet that most of my broken devices are back working after a weekend of work by my sweet husband-I can dry clothes and use my windshield wipers in my car so that is a sweet thought. I have a kitchen full of sweet breakfast treats so I was able to be lazy this morning which was sweet-I enjoyed a chocolate chip pancake with strawberries. Oh and there is a flock of bluebirds that loves to play in our yard. There are about 6 of them that race each other around it, it looks like they are playing tag. After a rousing game they settle on our fence or perch on top of our umbrella. A few of them are so breathtakingly blue that they don’t seem real. That is my sweet Monday morning thought, bluebirds resting in glorious color around my yard. Hope your Monday is sweet.
What a wonderful morning!!! It is the type of summer morning that you dream about- brillant blue sky, light breeze, low humidity and that just right summer temperature-warm enough for swimming but not warm enough to melt. The birds are singing with joy and it is a sweet, sweet morning!
To celebrate I made a new recipe, Chocolate Strawberry Muffins. Daughter 2 looked at them and thought Really Mom, really they do not sound that good but she was surprised. She said they are interesting and I can make them again!! High praise from a finicky eater. So here is the recipe.
Chocolate Strawberry Muffins
Printer Friendly Recipe
2 cups flour 1/3 cup cocoa
1/2 cup sugar 1 1/2 tsp baking soda
2 eggs 1 cup lowfat plain yogurt
1/4 cup melted butter 1 tsp vanilla
1 cup chopped strawberrries 1 cup chocolate chips
Preheat oven to 375
Grease muffin tins
In large bowl sift together flour, sugar, cocoa, baking soda
In another bowl stir together eggs, yogurt, melted butter, and vanilla
Toss strawberries with flour mixture
Pour egg mixture into flour mixture
Stir until flour is just moistened
Fold in chocolate chips
Spoon into muffin cups
Bake 20-25 minutes

Today is the last day daughter 2 has to go to school for the year-she finishes her exams so she doesn’t have to go back. So of course she requested a sweet treat to celebrate, her favorite muffins Peanut Butter Chocolate Chip. I mixed them up last night and stuck them in the fridge so when I got up all I had to do was scoop them into muffin tins and pop them in the oven. By the time she left for school there were hot muffins! These muffins combine two favorites, peanut butter and chocolate chips and are scrumptious! They never last long around here because they also make an excellent after school snack. Hope you enjoy this sweet morning treat as much as we do!
PEANUT BUTTER CHOCOLATE CHIP MUFFINS

2/3 cup smooth or crunchy peanut butter
2 tablespoons butter, melted
¾ cup sugar
1-1/2 teaspoons vanilla extract
1-1/2 cups flour
1-1/2 teaspoons baking powder
½ teaspoon baking soda
½ cup milk
6 ounces semisweet chocolate chips (1 cup)
1 Preheat oven to 350o F
2 In a large mixing bowl, combine peanut butter and melted butter, stir until well blended
3 Mix in sugar, eggs and vanilla
4 Combine flour with baking powder and baking soda
5 Add to peanut butter mixture along with milk and chocolate chips
6 Stir just until combined
7 Spoon batter into 12 paper lined 2-1/2 to 3-inch muffin tins.
8 Bake 20 to 25 minutes, or until muffins spring back when lightly touched in center
9 Serve warm or at room temperature
